Well, it has been quite a while since sharing on this space. This past year was all about letting go of what no longer served me, transitioning into this new part of myself and lastly, rooting in my new mountain town home of Bend, Oregon. It has been such a wonderful past few months of finally feeling like I’ve found my place, at least for now. It is the most wonderful thing to be living near family. And one of the best parts is that I get to see my lovely Godmother Rebecca frequently. We share a love for styling out whimsical scenes and she's always cheering on some of my most outlandish ideas. We decided we wanted to celebrate the deep winter by having a whimsical picnic in the fresh powdery snow. We dug out a little space for a magical wooden farm table I recently bought at an estate sale and brought beautiful soups, treats from the ever-lovely Foxtail Bakeshop and invited our nearest and dearest (my sister Lily and her family.) Luna Reb’s sweet pup was there as well. OH! And can’t forget about my lovely friend Robert who was the most wonderfully vibrant and amazing assistant stylist. We shot this scene for the Rainshadow Organics Cookbook we’ve been working on. More details on that to follow. Rebecca's Green Soup:
Start by sautéing one yellow onion, diced, in a tablespoon of coconut oil. Next, add 2 cups of fresh spinach, 1/2 cup green peas, 2 cups chicken broth and a nice splash of full fat canned coconut milk (a half cup, or so!) Gently warm and then use an immersion blender to puree. Season with cumin, pink salt and pepper.
Notes: if you haven’t gotten your hands on an immersion blender yet, well, I can’t recommend one enough. So much easier to use than a food processor with way less clean-up and more affordable. Also, don’t forget to use pink salt instead of regular table salt—it’s so much more nutrient dense as it is filled with healing minerals that are great for your adrenals!
