And by "super into them" I mean I have been actually enjoying the process of making sweet confections, which is a big surprise for me because I usually stay away from baking with a ten foot pole. There's something so fun about making sweet treats—but to be honest, I usually pawn my creations off to friends + family so I don't eat too many!! But man...these no bake cookie dough bites are killah. They are quick and fun to make and perfect for warmer days when you don't want to turn the oven on. The inspiration for these comes from The Kitchn's Coconut Snowballs, a recipe I have made more than a few times over the years.  But in all honesty, I have always found them to be a bit plain, and when it comes to flavor, I like a party in my mouth. I decided to add my own little zing! to them by adding some fllava. And I ended up making two different flavors because I couldn't stop—they were so fun to experiment with. And I swear, these literally take ten minutes to make. Give these healthy bliss balls a try and let me know what you think!

Carob Mint Bliss Balls 

2.75 cups finely shredded coconut, divided into 1.75 cups, .75 cups, and .25 cups

2 teaspoons melted extra virgin coconut oil

3 tablespoons maple syrup

1 tablespoon + 1 teaspoon carob powder

1 teaspoon mint extract

1/2 teaspoon vanilla extract (AIP reintro)

1/8 teaspoon sea salt

Orange-Coconut Bliss Balls

2.75 cups finely shredded coconut, divided into 1.75 cups, .75 cups, and .25 cups

2 teaspoons melted extra virgin coconut oil

3 tablespoons raw honey

2 tablespoons orange juice

1 teaspoon orange extract

1/2 teaspoon vanilla extract (AIP reintro)

1/8 teaspoon sea salt

Method (Applies to both!)

1.  Add 1.75 cuips finely shredded coconut and process in a food processor until a thick paste forms. This will take approximately 2 minutes. You want to keep a bit of texture to the paste.

2. Add the rest of the ingredients and process for another 30 seconds or until combined. Next, add the remaining .75 cups of finely shredded to the coconut and pulse 2-3 for approximately five seconds until well combined.

3. Using a cookie scoop (or your hands) make small balls with the dough. This should yield about eight bliss balls. Next, roll the balls in the remaining .25 cup of finely shredded coconut. refrigerate until firm, about 30-60 minutes) and then devour!
